Buffalo Chicken Mac

One of my favorite comfort food recipes!

  • 16 oz Noodles
  • 6 tbs Butter
  • 6 tbs Flour
  • 2 cups Whole Milk
  • 8 oz Cream Cheese
  • 2 cups Mozzarella Freshly Shredded
  • 2 cups Monterrey Jack Freshly Shredded
  • 2 cups Sharp Cheddar Freshly Shredded
  • 1 cup Sour Cream
  • 4 cups Chicken I like to use 3 cups chicken and 1 cup bacon. Adjust to your liking.
  • 16 oz Buffalo Sauce I prefer Sweet Baby Ray's for this recipe, but use your favorite.
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Ground Mustard
  • 1 ea Panko See notes for recipe


  • Gather your ingredients. Set your oven for 350 degrees.
  • Start by preparing your noodles until they are al dente. You can start prepping your roux while they cook if you'd like.
  • Strain your noodles and set aside.
  • To make the roux, melt the butter in a large pot over low heat.
  • Once butter is melted, add the flour. Stir.
  • This is what your roux should look like when ready.
  • Still over low heat, add the milk and spices.
  • Bring to a boil while stirring. Once boiling, quickly reduce heat to low and stir until thickened.
  • Add the cream cheese and stir until blended.
  • Add the sour cream and then the shredded cheese (a little bit at a time) and continue stirring until well blended. You may need to adjust the heat a bit. We want it warm enough to melt the cheese, but not so hot that it clumps.
  • Add the hot sauce and stir again until well blended.
  • Add your chicken & bacon while continuing to stir.
  • Add the noodles and stir.
  • Place your mac & cheese into a lubricated cooking pan.
  • Prepare your panko topping (see notes for recipe).
  • Spread the panko on top of the mac & cheese and cook for 15 – 20 minutes.
  • Serve & Enjoy!
