Gather your ingredients. Set your oven for 350 degrees.
Start by preparing your noodles until they are al dente. You can start prepping your roux while they cook if you'd like.
Strain your noodles and set aside.
To make the roux, melt the butter in a large pot over low heat.
Once butter is melted, add the flour. Stir.
This is what your roux should look like when ready.
Still over low heat, add the milk and spices.
Bring to a boil while stirring. Once boiling, quickly reduce heat to low and stir until thickened.
Add the cream cheese and stir until blended.
Add the sour cream and then the shredded cheese (a little bit at a time) and continue stirring until well blended. You may need to adjust the heat a bit. We want it warm enough to melt the cheese, but not so hot that it clumps.
Add the hot sauce and stir again until well blended.
Add your chicken & bacon while continuing to stir.
Add the noodles and stir.
Place your mac & cheese into a lubricated cooking pan.
Prepare your panko topping (see notes for recipe).
Spread the panko on top of the mac & cheese and cook for 15 – 20 minutes.
