Gather your ingredients. Set your oven for 475 degrees.
In a pot that's big enough to contain your whole cauliflower (but not overly large), combine all the ingredients except the cauliflower.
Bring to a boil and stir. Then reduce to a simmer.
Place your cauliflower into the pot upside down. If it's not well covered, I'd suggest adding the extra wine and olive oil. Roll it around so that all of the cauliflower gets coated in the liquid.
Let cauliflower simmer about about 20 minutes or so. I covered the pot to help cook & soften the cauliflower. Occasionally roll the cauliflower around to ensure it remains well coated in the liquid.
Place onto baking sheet after the 20 minutes is up or when it has nicely softened.
Bake in the oven for about 30-40 minutes.
When browned, remove from the oven.
