Drunk Roasted Cauliflower

A unique and flavorful take on cauliflower!

Ingredients

  • 1 ea Cauliflower Remove the leaves and majority of stem.
  • 2 cups White Wine You may need the whole bottle
  • 1/4 cups Olive Oil You may need up to 1 cup
  • 3 tbs Lemon Juice
  • 1.5 tbs Chili Flakes This provides quick a bit of kick. Use less if you don't like a lot of heat.
  • 2 tbs Butter
  • 1 tbs Salt
  • 1/2 tbs Sugar
  • 1 ea Bay Leaf

Instructions

  • Gather your ingredients. Set your oven for 475 degrees.
  • In a pot that's big enough to contain your whole cauliflower (but not overly large), combine all the ingredients except the cauliflower.
  • Bring to a boil and stir. Then reduce to a simmer.
  • Place your cauliflower into the pot upside down. If it's not well covered, I'd suggest adding the extra wine and olive oil. Roll it around so that all of the cauliflower gets coated in the liquid.
  • Let cauliflower simmer about about 20 minutes or so. I covered the pot to help cook & soften the cauliflower. Occasionally roll the cauliflower around to ensure it remains well coated in the liquid.
  • Place onto baking sheet after the 20 minutes is up or when it has nicely softened.
  • Bake in the oven for about 30-40 minutes.
  • When browned, remove from the oven.
  • Serve & Enjoy!

Notes

  • This cauliflower has enough flavor that it doesn’t need a dip, but I’d highly recommend pairing it with my Whipped Goat Cheese dip!’
  • I like playing around with cauliflower because it is trendy and draws people to my website.  😉  But most of these cruciferous recipes would taste better if they were chicken, potato, rice or whatever traditional ingredient the cauliflower is impostering.  In this case however, I can say that the cauliflower is amazing on it’s own.
