  • 4 ea Potatoes I used medium sized Russets. Try to find some that are uniform in shape.
  • 1/4 cup Parmesan I used grated.
  • 3 tbs Olive Oil
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 1 tsp Salt I used smoked sea salt.
  • 1 tsp Pepper
  • 1 ea Parsley To garnish.

  • Gather your ingredients. Scour & clean those taters! Get your oven set for 400 degrees.
  • Slice the taters into wedges. I find that cutting each one into 8 wedges works well.
  • Soak the wedges in HOT water for 10-15 minutes.
  • While soaking, add and mix all of your dry ingredients / seasoning in a small bowl.
  • Dry the wedges when done soaking.
  • Place the wedges into a large bowl that you can cover with a lid. Add the olive oil. Cover the bowl and shake it, baby!
  • Once well coated in olive oil, add the dry ingredients. Cover the bowl and shake it some more (like your money maker). 😉
  • Spread the wedges out on a cookie tray with parchment paper as shown.
  • Bake for 60 minutes. Keep an eye on them…. times will vary. Sprinkle with parsley.
  • Serve & Enjoy!
