Gather your ingredients. Scour & clean those taters! Get your oven set for 400 degrees.
Slice the taters into wedges. I find that cutting each one into 8 wedges works well.
Soak the wedges in HOT water for 10-15 minutes.
While soaking, add and mix all of your dry ingredients / seasoning in a small bowl.
Dry the wedges when done soaking.
Place the wedges into a large bowl that you can cover with a lid. Add the olive oil. Cover the bowl and shake it, baby!
Once well coated in olive oil, add the dry ingredients. Cover the bowl and shake it some more (like your money maker). 😉
Spread the wedges out on a cookie tray with parchment paper as shown.
Bake for 60 minutes. Keep an eye on them…. times will vary. Sprinkle with parsley.
