Hard Candy

The classic method of making hard candy.

  • 2 cups Sugar
  • 2/3 cups Light Corn Syrup
  • 3/4 cups Water
  • 1 tsp Super Strength Flavoring I used raspberry here.
  • 1 ea Food coloring I used red.
  • 1 tsp Citric Acid Optional – See notes.


  • Gather your ingredients. Your going to want a candy thermometer as well.
  • Combine the sugar, corn syrup, and water. Stir over medium heat until dissolved.
  • Stop stirring and bring the liquid up to a boil.
  • Once boiling, add in the flavoring and food coloring. DO NOT LET THE TEMP GO ABOVE 300 DEGREES. Remove from heat and move to the next steps immediately once 300 degrees is approach.
  • At this point you have options to form the candy as you wish. You could drizzle it into strings. Be sure you very lightly grease whatever you pour the candy onto.
  • So pretty, right?
  • Or you could pour it onto a lightly greased cookie sheet.
  • And then make shapes!
  • Or once hardened you could shatter it.
  • That's it. Feel free to toss it around in some more citric acid if you want. Otherwise eat & enjoy!


  • The citric acid is optional and adds some sour flavor.  I’m still playing around here and I’m thinking there may be a better acidic product if you’re wanting SUPER sour candy.
