Gather and prep your ingredients.
Heat the oil in a large pan. Add the mushrooms.
Stir and cook the mushrooms until done. Remove and set aside. Clean any remaining oil from the pan.
Melt the butter over low heat. Add the garlic. Cook for a little bit.
Add the flour. Stir well.
Add the cream and broth. Stir well.
SLOWLY add the cheese while continuing to stir. The heat should be just enough to melt the cheese, but not enough to cause it to clump.
Stir and reduce a bit.
Add the mushrooms. Then add the remaining ingredients. Stir. Reduce to your desired consistency.
Taste and adjust as needed. A little salt goes a long way. Enjoy!
