  • Sometimes I whip something together as an experiment and it turns out really well and I feel a need to share it.  Unfortunately I often don’t document the whole process as well as I do with the traditional recipes that I post.  So, to make this Red Wine Risotto, you should follow my instructions for Truffle Risotto with a couple exceptions:
    • Obviously don’t put in any truffle oil unless you want to.
    • Substitute red wine for the white wine.  I used 2 cups (1 cup at a time) as opposed to just the 1 cup listed.
    • I added some crispy prosciutto and fresh parsley. 
    • Lastly, I shaved some fresh black winter truffles ontop.
