Shrimp & Asparagus Ravioli

A very tasty combination (and healthy!) for stuffed ravioli.

  • 1 ea Ravioli See notes
  • 10 ea Shrimp Use more if you'd like a heavier shrimp flavor.
  • 1 ea Bundle of Asparagus
  • 4 tbs White Wine Cooking wine is ok, just note the saltiness. Otherwise sub real wine.
  • 1 ea Shallot
  • 2 cups Cheese I used farmer's cheese here
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 3/4 tsp Salt Less if you like
  • 1 ea Basil Use as much or little as you like
  • 1 ea Parsley Use as much or little as you like.
  • 1 ea Truffle I'd suggest skipping this. I added one since it was about to go bad, but the asparagus hid the flavor. If you have one though, definitely feel free to shave it on top when done!
  • 1 ea Parmesan Freshly shredded for topping
  • 1 ea Sauce I used a white wine sauce – See Notes


  • Gather your ingredients.
  • Cook the shrimp in the white wine.
  • Remove the tails from the shrimp and set aside.
  • Cook the asparagus in the pan. Don't need it cooked soft. Just enough to bring out the flavor a bit.
  • Add all of the ingredients into a food processor. Hold off on the salt for now.
  • Process until a nice paste consistency is formed. Taste it and add ingredients as needed (salt included).
  • Create your ravioli shells (see notes).
  • Boil according to the link it my notes.
  • Remove cooked ravioli and pat dry.
  • Place the ravioli and sauce into a sealed container and gently shake to coat the ravioli in the sauce.
  • This is what a cut ravioli will look like. 😉
  • Plate, garnish, and enjoy!

  • This stuffing is actually extremely tasty.  You might see me play with it a bit in the future… add some cheese… and turn it into a dip!
