Set your smoker for 300 degrees, indirect. I like using apple and hickory wood for this smoke. I haven't tried pecan wood, but something tells me that would nicely compliment the nuts too. 😉
Take a small sip of your bourbon and proceed to mix all the solid ingredients together.
Stir the egg whites and water together in a separate bowl until blended and frothy. Add the bourbon. Pour the mixture into a large plastic bag.
Take another small sip of your bourbon and add the pecans to the bag. Ensure they are well coated with the liquid.
Add the solids and toss until pecans are coated.
Place the pecans into the smoker and give them a good stir every 10 minutes or so until done, while continuing to sip your bourbon.
I've found that usually a total of an hour does it. You don't want to let them go to the point that they start to burn, so do keep an eye on them. The color of the pecans is your best bet to judge by.
Remove and let cool. Eat & enjoy!
