Spicy Gambas

A spicy version of the Spanish "Gambas al Ajillo"

Ingredients

  • 1 lb Shrimp
  • 6 cloves Garlic Minced
  • 1/2 cup Green Chilis Chopped
  • 1/4 cup Olive Oil
  • 3 tbs Chili Sauce
  • 1/4 cup Tomato Sauce
  • 2 tbs Cooking Sherry or Rice Wine
  • 1 tsp Hot Paprika
  • 1 ea Parsley to Garnish
  • 1 ea Salt & Pepper to Taste
  • 1 ea Additional Peppers for Heat Completely Optional 😉
  • 1 ea Baguette Sliced into thin sections

Instructions

  • Prepare your ingredients
  • Heat the oil and saute the garlic
  • Add shrimp, paprika, peppers, salt, and pepper
  • Cook until the shrimp are just barely done (about 2 minutes)
  • Add the sherry / wine and stir
  • Add the tomato sauce and chili sauce. Continue to stir.
  • Garnish with parsley and serve when bubbling

Notes

  • Gambas is a dish that is very dear to me.  It is Spanish in origin, but the first time I ever had it was in Bohol, Philippines and I fell in love with it.  To this day, I’m trying to recreate that first experience I had.  I haven’t gotten it figured out quite yet, but I’m getting close.  This recipe is a bit less garlicky and salty than what I’m aiming to find, but it is still very good.
  • The baguettes are great for mopping up the sauce
