Ingredients
- 1 ea Ham I used a Berkshire Bistro ham.
- 1.5 c Brown Sugar
- 1 c Pomegranate Molasses
- 2 tbs Whiskey Use more if you like. 😉
- 1/2 tsp Cinnamon
- 1/4 tsp Ginger
- 1 ea Pomegranate Berry Seeds I bought a whole jar and ate the extras straight from it.
Instructions
- Gather your ingredients. Remove the fat cap from your ham (if it has one) and clean off that gelatin layer that most hams come with. Let your ham rise to room temp. Set your oven for 325 degrees.
- In a bowl, mix together the molasses, 3/4 cup of brown sugar, whiskey, cinnamon, and ginger.
- Place your ham on a rack and into a roasting pan.
- Cover the outside of the ham with the molasses mixture. Save some of the molasses for later on though. Cover the ham in the roasting pan (or with tin foil) and bake about 1 hour or until internal temp hits 120.
- Uncover the ham and apply the remainder of the molasses and the remaining 3/4 cup of brown sugar. Rub the sugar so that it forms a crust.
- Place the ham back into the oven at 425 degrees or even a broil. Keep an eye on it. It won't take long to start burning the brown sugar and we don't want that.
- Plate, Slice, cover in pomegranate berries, and enjoy!
- Shameless plug for the ham with my Cajun bacon turkey. See notes for that recipe. 😉
