Spicy Gambas
A spicy version of the Spanish "Gambas al Ajillo"

- 1 lb Shrimp
- 6 cloves Garlic Minced
- 1/2 cup Green Chilis Chopped
- 1/4 cup Olive Oil
- 3 tbs Chili Sauce
- 1/4 cup Tomato Sauce
- 2 tbs Cooking Sherry or Rice Wine
- 1 tsp Hot Paprika
- 1 ea Parsley to Garnish
- 1 ea Salt & Pepper to Taste
- 1 ea Additional Peppers for Heat Completely Optional ;-)
- 1 ea Baguette Sliced into thin sections
Prepare your ingredients
Heat the oil and saute the garlic
Add shrimp, paprika, peppers, salt, and pepper
Cook until the shrimp are just barely done (about 2 minutes)
Add the sherry / wine and stir
Add the tomato sauce and chili sauce. Continue to stir.
Garnish with parsley and serve when bubbling
- Gambas is a dish that is very dear to me. It is Spanish in origin, but the first time I ever had it was in Bohol, Philippines and I fell in love with it. To this day, I'm trying to recreate that first experience I had. I haven't gotten it figured out quite yet, but I'm getting close. This recipe is a bit less garlicky and salty than what I'm aiming to find, but it is still very good.
